Abstract

Both Coorg and Sathgudi orange juice powders are good carriers for added ascorbic acid during prolonged storage at ordinary temperatures. There is not much difference between nitrogen and air packs as regards retention of ascorbic acid during storage. Nitrogen pack, however, helps to keep the power in a better free-flowing condition.
